Instructions
1: Prep and wash your bittermelon. Remove the ends and discard. Remove the seeds from the bittermelon and cut into thin slices. Set aside. 2: In a small bowl, crack 3 eggs and beat until well combined. Set aside. 3: In a large wok, add 2 tbsp of cooking oil over medium-high heat. Once the oil is hot, add your garlic. Allow it to get golden - 30 seconds. 4: Add your bittermelon slices and stir well. Cook for 2 minutes. 5: Add 1/4 cup water and lower the heat to medium to help steam the bittermelon. Allow this to cook for 5 minutes or until the water is fully evaporated and the bittermelon turns a yellow-green color. 6: Move the bittermelon to half of the wok. Spray the empty side of the wok with some cooking spray or oil. Add your beaten eggs. 7: Gently stir the egg and wait for it to solidify - 1 min. Then combine the eggs with the bittermelon. Season with salt, sugar, and MSG. 8: Plate and top with black pepper. Serve this with a side of rice.View original recipe
